In Mexico, real barbacoa is made from the whole head of a cow that’s been wrapped in banana leaves and buried in the ground together with some burning charcoal. However, due to practical reasons, in this recipe I have chosen to replace the head with braising steak. Perhaps not as spectacular but easier to source and doesn’t scare the kids.

SERVES 6–8

Texas rub

1–2kg/2¼–4½lb braising steak

hickory wood smoking chips

2 dried chillies, eg ancho

2 dried chipotle chillies

330ml/11fl oz/1½ cups beer

1 tbsp chilli powder

1 tsp ground cumin

1 tsp dried coriander seeds

2 tsp dried oregano

2–3 tbsp plain (all-purpose) flour

6 garlic cloves, finely chopped

2 brown onions, sliced

1–2 fresh chillies, sliced

salt and freshly ground black pepper
